Cross-Hatched San Mai Chef's Knife

This knife is my most one-of-a-kind, one-offs. The handle scales are carefully roasted hard maple which I roasted myself to get the perfect combination of stability, strength, and beauty. To further add to the beauty of the maple I did some carving on the sides, nothing flashy but just enough detail to make the handle pop. The black canvas micarta pins and dark wenge frame are the perfect contrasting elements to the lighter maple. The light/dark theme of this knife is continued into the blade with a san mai construction. The blades unique san mai pattern is a result of drawing the steel out in a cross hatching pattern unlike anything I’ve produced before. The blade is ground very thin (2mm or 5/64” at the thickest) to provide the best possible cutting experience. The grind of this knife has a slight convexity near the edge which provides strength and durability to its razor thin geometry.

This knife was forged from san mai consisting of an 80CrV2 core and 15N20 cladding. The blade length is 8 ½ inches and the total length is 13 ½ inches. Its weight is 5.1 oz.
