San Mai German Style Chef's Knife

This knife is special since it is the first knife that I’ve done a Walkschliff grind. A Walkschliff grind is a traditional German blade grind that is done on chef knives to give the knife some food release. The grind produces a bulge near the center of the blade which helps push food off the side. This knife also follows a traditional German style thickness of 4mm at the spine but is still perfectly balanced due to the grind. The extra thickness and slender profile of the blade means that the Walkschliff grind is very pronounced which significantly increases its food release ability. The core steel is 80crv2 with 15n20 cladding which has a hand rubbed finish to make the 15n20 pop as much as possible. The hand rubbed finish is not as clean as a straight hand sanded finish but I feel it matches the rustic look of this knife and really enhances the pattern. The handle is a frame handle construction with Brownheart scales, a Wenge frame, and black linen micarta pins. The blade length is 8 inches, heel height is 1 ¾ inches, 13 inches overall, and weighs 7.2 ounces.
